I remember walking outside a couple of weeks ago, early in the morning, and it was nice and cool. And as the brisk air hit my skin, I remember thinking "enjoy it - because it's about to get wretched hot"...
Not 48 hours later, the air conditioner kicked on... and here we are...
I love grilling season - it's easy. It's a great way to feed a crowd without making your kitchen look like a war zone.
It's also a fantastic way to meal prep. Peaches and pork on one side. Chicken thighs, asparagus on the other. On top, there's a foil pouch filled with squash, zucchini and onions. Dinner for the week? Done.
I also love that that's Hubster's domain - I'm going to be honest - I love grilling because I don't have to do it. That's his thing. Not in a macho way or anything, but, full disclosure, I have set the grill on fire... like raging, neighbor's came running over to check on us and see if we needed the fire department, fire... more than once over the course of our marriage. #truestory
Now that the air conditioner is running, the last thing I want to do is heat the house up running the oven, so when we picked up our first batch of pasture raised chicken for the spring, it was the perfect opportunity to get the grill going for the first time this year.
My meal of choice for our inaugural run on the grill?
Lemon pepper chicken drumsticks.
They look amazing, don't they?
The best part is they're SO easy! Just throw drumsticks into a Ziploc baggy with the marinade for a few hours and then toss onto the grill.
